Chimi Lamb Stir-fry
400g lean lamb, sliced into thin strips
2 1/2 tablespoons vegetable oil
1 large onion, peeled and cut into wedges
1/2 cup Chimi mild or hot
Place the lamb in a bowl and add Chimi, stir and mix together. Marinate for at least 20 minutes.
Heat the oil on medium – hot in a wok or lage fry pan. Stir-fry the onion until it becomes translucent and softens.
Add the marinated lamb and stir-fry for 2 minutes, stirring constantly.
Remove from the heat. Serve on its own, over mashed potato or on mixed leaves as a warm salad.
