Chimi Pork Mince in Toasted Rolls
400gr lean minced pork
1 teaspoon olive or vegetable oil
1 small red or brown onion, very finely chopped
1 baguette , cut into 4 pieces and sliced in half, lightly toasted
1/3 cup Chimi sauce hot or mild
Marinade Pork mince in Chimi sauce.
Cover and refrigerate for 2 hours.
Heat a wok or large fry pan for 30 seconds, then add the oil, when hot, add the onion and fry over a medium heat until softened, 3 minutes.
Add the marinated Pork and fry over a medium heat until the meat is cooked, about 4 minutes.
Spread the cooked mixture on the toasted baguette halves, serve hot or warm.
