Chimi Roasted Potatoes

Chimi Roasted Potatoes

Ingredients

  • 1/4 cup (60g) butter
  • 500g small potatoes, scrubbed and halved
  • 3/4 teaspoon salt
  • 1/2 cup Chimi mild or hot

Directions

  1. Heat the butter in a wok or large frying pan.
  2. Add the potatoes and salt, fry until golden, about 5 minutes.
  3. Using a slotted spoon, transfer the potatoes to an oven tray.
  4. Preheat the oven to 180°C.
  5. Place potatoes evenly on tray, smother potatoes with Chimi.
  6. Place tray in the centre of the oven.
  7. Cook, turning the potatoes once or twice until tender, at least 45 minutes.
