Rice Ribbon Noodles with Beef in Chimi Sauce
1/4 cup (60ml) vegetable oil
250gr lean rump steak, sliced into strips
2 cups small broccoli florets
4 spring onion / shallots, cut into 3cm lengths
500gr fresh rice ribbon noodles, rinsed in lukewarm water and drained
1/2 cup Chimi sauce hot or mild
Heat 1 1/2 tablespoons of the oil in a wok or large fry pan on high heat.
Add the beef and stir fry until almost cooked, about 1 1/2 minutes. Remove and set aside.
Add the remaining oil. Reheat the wok on medium.
Add the broccoli and spring onions, stir fry for 1 minute.
Add the noodles and chimi sauce. Return the beef to the wok, stir fry until well mixed with Chimi sauce.
